<div class="separator" style="clear: both; text-align: left;"> If there&#8217;s one thing I like stocking my freezer with, it&#8217;s puff pastry. Pepperidge Farm is one brand I usually keep on hand. The other one I like is Dufour Pastry Kitchens brand, however it can be hard to find. Nonetheless, with puff pastry, I&#8217;m never too far away from whipping up some great appetizers to serve guests or just to snack on. My parents are visiting from overseas and I made these Pesto Palmiers as a snack the other day. My mom especially is a fan of the buttery, flaky layers that puff pastry is known for so it was no surprise she loved these!</div>
<div class="separator" style="clear: both; text-align: left;">I&#8217;ve never attempted to make my own puff pastry however I hope to someday. Until then, it&#8217;s so easy to just use prepared puff pastry. I must admit I much prefer savory palmiers than sweet since the filling  options are endless and can capture all sorts of flavors. These savory palmiers are filled with homemade pesto, sundried tomatoes, toasted pine nuts and a blend of Parmesan and Asiago cheese. The original recipe called for goat cheese so feel free to try this recipe with goat cheese as well.

<div style="text-align: center;"><b>Pesto Palmiers</b><br />
recipe adapted from Ina Garten</div>
<p>1 package frozen Pepperidge Farm puff pastry, defrosted <br />
1/4 cup prepared pesto, store bought or homemade (recipe follows) <br />
1/4 cup grated Parmesan cheese<br />
1/4 cup grated Asiago cheese<br />
1/4 cup finely chopped sundried tomatoes in oil, drained <br />
1/4 cup toasted pine nuts <br />
Kosher salt</p>
<div class="instructions">    Lightly flour a board and carefully unfold one sheet of puff  pastry.  Roll the pastry lightly with a rolling pin until it&#8217;s 9 1/2 by  11 1/2-inches.  Spread the sheet of puff pastry with half the pesto,  then sprinkle with half the goat cheese, half the sundried tomatoes, and  half the pine nuts.  Sprinkle with 1/4 teaspoon salt. </p>
<p>
Working from the short ends, fold each end halfway to the center.   Then fold each side again towards the center until the folded edges  almost touch.  Fold one side over the other and press lightly.  Place on  a baking sheet lined with parchment paper.  Repeat the entire  instructions for the second sheet of puff pastry using the remaining  ingredients.  Cover with plastic wrap and chill for at least 45 minutes. </p>
<p>
Meanwhile, preheat the oven to 400 degrees F.</p>
<p>
Cut the prepared rolls of puff pastry in 1/4 inch thick slices and  place them face up 2 inches apart on baking sheets lined with parchment  paper.  Bake for 14 minutes, until golden brown.  Serve warm. </p>

<div class="instructions">    Place the walnuts, pine nuts, and garlic in the bowl of a food  processor fitted with a steel blade. Process for 30 seconds. Add the  basil leaves, salt, and pepper. With the processor running, slowly pour  the olive oil into the bowl through the feed tube and process until the  pesto is finely pureed. Add the Parmesan and puree for a minute. Serve,  or store the pesto in the refrigerator or freezer with a thin film of  olive oil on top. </p>

Add 2-3 drops lemon juice &amp; colour &amp; essence as required, &amp; beat again. Turn the cake tin around between baking if the oven is not distribution even heat &amp; the cake is baking unevenly. Always preheat oven to the required temperature before placing the cake in the oven. Prick with a knitting needle or skewer to check if done. The needle should come out neat. A nice thing about most rotis is that you can half roast &amp; pile them &amp; do the final roast before serving Puri may be rolled &amp; place between well-rinsed wet muslin cloth at least an hour ahead. Fry before serving. Store leftover dough &amp; filling in freezer (properly packed) to make fresh parathas when required. Take care to thaw the ingredients before using. Leftover parathas eaten chilled with hot tea taste nice. To keep chappatis warm longer, cover the pile with six piece of neat cloth above &amp; below in a tight steel container. Leave on a griddle that has been warmed first. Use the water drained from curdle milk to knead chappati dough. They will turn out softer &amp; whiter. Never keep the batter thick. The cake will turn out hard &amp; dry The cream used should always be chilled &amp; beaten in sharp upward strokes to incorporate air. Never overbeat. Always chill glasses before preparing the icecream in it. This way it will stay stiff longer. Use aluminium containers instead of steel to set the icecream faster. Also, place a thick plactic sheet or spread some salt under the container to keep it from sticking to the floor of the freezer. Never try to refreeze icecream which has melted due to reasons like electricity breakdown. The result will taste disastrous. Instead, add you favourite flavour or fruit &amp; run in a mixie to make scrumptious milk shake. For simple but extravagant looking topping, take 2-3 healthy strawberries. Make incisions vertically from tip to base, to form slices. But do not cut fully. Stop below the base. Now press sideways gently, to form a fan shaped strawberry. Use as topping decor for cakes, icecreams, puddings, etc. It is best to defrost the fridge before making icecream, so that the base of the container is not jammed, as also the icecream will set faster &amp; better. Crush chikki coarsely &amp; use as nougat over cakes &amp; icecreams. Use nuts of your choice.  If fish is to be stored for over a day, neat it, rub with salt, turmeric &amp; if liked, a dash of vinegar before freezing. Always use glass, porcelain or china jars for picklings. Make sure the lids can be secured tightly.

<p>Soul food recipe sites are continue to adapt and reinvent itself to meet changing consumer needs. The traditional southern cooking has changed to a leaner and more user- friendly style of cooking. When you think of southern food you normally visualize hearty and heavy meals filled with heaping helpings of butter, fat and salt. Oh-so delicious, but unhealthy by today&#8217;s health standards. <p>More and more soul food recipes of today recognize and continues to work feverishly to meet this challenge. For example, less deep fat frying and more pan frying, baking and grilling is recommended in many soul food recipes now.</p>
<p>In addition, stir-frying is introduced for the first time to many soul food recipes for a healthier lighter alternative. For example, a big hit on many websites is stir fried cabbage as well as stir fried collard greens. Traditionally these vegetables were boiled in large amounts of water for one to two hours. Doing this caused many of the valuable vitamins and nutrients to be loss in the cooking process. However, by using the quick stir fry method of cooking most the vitamins and nutrients are preserved as well as the taste</p>
<p>Another popular element added to soul food recipe sites is video. Many sites have recognized the importance of including demonstration videos with the written recipes. This gives the visitor a better show-and-tell idea of how to prepare the recipes, especially for beginning cooks or people preparing the recipe for the first time.</p>
<p>These changes continue to win rave reviews from visitors. As the economy slows more people change from eating out to eating in and saving money. The soul food recipes found on these new-school websites continues to help more families who struggle to slash their food cost while providing healthier meals. <div style="text-align: left;">One of our favorite Italian inspired dishes here at home is a shrimp scampi. My husband recently suggested this dish and when I didn&#8217;t have any shrimp on hand, I improvised and used chicken instead. Some folks may be familiar with Olive Garden restaurant&#8217;s chicken scampi dish on their menu and this Chicken Scampi recipe is inspired by that. It has a nice punch of garlic, a butter and white wine sauce and a melange of colorful bell peppers and onions that make it a great meal perfect for a weeknight or even for guests!&#8230;</div>
<div style="text-align: left;">We can&#8217;t get enough garlic in our house so any recipe calling for good amounts of it are welcomed in my kitchen! This recipe starts out with seasoning bite sized pieces of chicken breasts with garlic powder, salt and pepper. The chicken is browned in a skillet, which is then deglazed with white wine and lemon juice. The dish simmers a bit before adding the colorful bell pepper and onion slices. We&#8217;ve loved this dish tossed with angel hair pasta, just as they do at Olive Garden. However, another alternative is serving this over rice or even mashed potatoes.<b> </b></div>

<p>
<div style="margin: 0px 8px 4px 0px;">3 tablespoons unsalted butter</div>
<div style="margin: 0px 8px 4px 0px;">2 tablespoons olive oil<br />5 cloves garlic, minced
<div style="margin: 0px 8px 4px 0px;">4 boneless, skinless chicken breasts, cut into bite sized pieces<br />1 teaspoon garlic powder<br />1 teaspoon onion powder</div>
<p>salt &amp; pepper to taste</p></div>
<p>1/2 cup white wine
<div style="margin: 0px 8px 4px 0px;">2 tablespoons lemon juice</div>
<div style="margin: 0px 8px 4px 0px;">1 1/2 teaspoons Italian seasoning<br />1 tablespoon fresh Italian parsley, minced + more for garnish<br />1 medium red bell pepper, seeded &amp; sliced<br />1 medium yellow bell pepper, seeded &amp; sliced<br />1 medium green bell pepper, seeded &amp; sliced<br />1 medium red onion, sliced</p>

<p><span class="plaincharacterwrap break">                     In a skillet heat the butter and oil  over medium high until the butter melts. Add the garlic and saute until fragrant. Add the chicken to the skillet along with garlic powder, onion powder, salt and pepper to taste. Cook chicken until lightly browned.</p>
<p>Once chicken is browned, deglaze the skillet by adding the white wine, lemon juice, Italian seasoning and fresh parsley; stirring to pick up any bits on the bottom of the skillet combine. Lower the heat and allow the chi</span>cken to simmer for 10 minutes. Add sliced peppers and onions and cook for an additional  7-10 minutes until peppers are tender.<span class="plaincharacterwrap break"></p>
<p>Serve tossed with buttered pasta (such as angel hair), over rice or with potatoes and garnish with additional fresh parsley.</span>
